Cherry Caper Cookies

These have always been a huge hit at our place around the holidays. The recipe comes from my Mom and I'm not sure where she got it. Basically chocolate chip cookies with cherries instead of chocolate but better tasting!

Ingredients:

1.25 cups all purpose flower
0.5 tsp baking soda
0.5 tsp salt
0.5 cup white sugar
0.25 cup firmly packed brown sugar
1 egg
0.5 cup butter or margarine
1 tsp almond extract
0.25 cup red/green glazed cherries (roughly chopped)

Sift dry ingredients into mixing bowl. In a second bowl mix the sugars, egg, shortening and almost extract. combine bowls, blend and mix throughly about 1 minute. Stir in cherries. Drop from teaspoon onto ungreased cookie sheet about 2 inches apart. Bake at 375F for 10-12 minutes or until golden.

Shawn, those look pretty good. And I bet you could use any candied fruit that struck your fancy -- dates, ginger, pineapple, etc. Depends on the look and flavor you are after.
